    Annie@SHVC: Hi Rhonda, tell us a bit about yourself and your stay in Shanghai,please.
    Rhonda: I came to SH in Dec 2006 for a 6 month assignment and am still here. I adore it. I am an organizational psychologist, working as a management consultant. Originally from California. I adore traveling and learning about different cultures, the outdoors, animals, and the arts. I am also a photographer (professionally as well as for personal expression).

    Annie@SHVC: Are you a vegetarian or vegan? How long have you been?
    Rhonda: I’m primarily vegetarian but occasionally eat seafood – so, I’m formally a pescaterian. Oh my – how long? Seems like forever, since I was about 15 years old (and was strictly vegetarian until mid-20s when I introduced seafood).

    Annie@SHVC: What is the biggest challenge so far that you met being a vegetarian in China?
    Rhonda: Quite honestly, none. Sure, many Chinese menus feature a vegetable section and the dishes include specks of meat or broths/sauces that are non-vegetarian. But I’ve been fortunate to have lots of Chinese friends that can ensure that the food I get is strictly vegetarian.

    Annie@SHVC: Besides eating healthy, do you also do something spiritual such as yoga and meditation?
    Rhonda: Absolutely. I’m a yoga fanatic, practicing 5-6 times/week (Bikram/hot). I’ve also recently started meditation with another SH Veggie Club member, Jivan, and I have quite enjoyed it. I am quite spiritual, particularly Buddhist. While I do not consider myself religious, I definitely adhere to many Buddhist beliefs.

    Annie@SHVC: Do you have any tips for being a happy single lady? I always love your smiles and positive attitude!
    Rhonda: Xie xie, Annie. If I have any tip it would be to ensure you have balance in life. Balance includes some work and lots of non-work (exercise, culture, friends, family, curiosity about the world in which we live, time to be introspective).

    Annie@SHVC: right…last but not least, what is your fav dish or restaurant in Shanghai?
    Rhonda: Without doubt, my favorite veggie restaurant here is Lucky Zen and Veg. Initially I stayed away from the SH veggie restaurants because they replicated meat – which I have never enjoyed – e.g. faux duck, mock beef. Lucky Zen and Veg foods are prepared very healthily (e.g., minimal oil), are fresh, and are very flavorful.
